The Recipe How-To

Gather the Ingredients

Before you start, make sure to gather all of the ingredients you need for this recipe. You will need:

  • 1 1/2 pounds of potatoes (preferably Yukon Gold or red potatoes)
  • 3 hard-boiled eggs, chopped
  • 1 small onion, diced
  • 1/2 cup of celery, diced
  • 1/4 cup of Miracle Whip
  • 2 tablespoons of sugar
  • 1 tablespoon of vinegar
  • Salt and pepper to taste

Cook the Potatoes

The first step is to cook the potatoes. To do this, you can either boil them or bake them. For this recipe, I prefer boiling them because it’s faster and gives me more control over the texture.

To boil the potatoes:

  1. Wash and peel the potatoes

  2. Cut them into small cubes (about 2-inch size)

  3. Fill a pot with water and bring it to a boil

  4. Add the sliced potatoes to the boiling water

  5. Reduce heat to medium and let them cook for about 10-15 minutes or until they are tender but not too soft.

  6. Drain the water and rinse under cold water to stop cooking

Mash the Potatoes

Once your potatoes are fully cooked, it’s time to mash them up!
There are two ways you can do this:

  • Use a potato masher: Mash the potatoes directly in their pot using a potato masher until they’re smooth.

  • Use a food processor: Transfer boiled potatoes into a food proccesor and follow manufacturer’s instructions until you get smooth texture.

Mix in Other Ingredients

Once you have mashed the potatoes, add in chopped hard-boiled eggs, diced onions, celery.

Then add 1/4 cup of Miracle Whip, 2 tablespoons of sugar and 1 tablespoon of vinegar

Season with salt and pepper to taste.

Mix everything together until combined.

Serve Your Mashed Potato Salad

You can serve your mashed potato salad immediately at room temperature or chill for an hour before serving if desired.

If you want to spice up your mashed potato salad recipe, there are plenty of substitutions and variations you can try.

Firstly, you can experiment with the types of potatoes you use. While this recipe calls for red potatoes or Yukon Gold, you can also use russet potatoes or even sweet potatoes for a twist on the classic Southern potato salad. If you’re feeling adventurous, swap the mayonnaise for a Caribbean-style Jamaican jerk sauce or add a Japanese twist with some wasabi and soy sauce.

If you’re looking for a lighter option, swap out the Miracle Whip for plain Greek yogurt or sour cream. This will give your dish a tangy flavor and turn it into a healthier alternative.

Another great substitution is using pickled celery instead of fresh celery for added flavor. You can also play around with different types of vinegar and sugar to create unique dressings. For instance, try using apple cider vinegar instead of white vinegar or substitute honey or agave nectar for sugar.

To make your mashed potato salad even more filling, consider adding grilled chicken breast, crumbled bacon, or diced avocado. These additions provide extra protein and heart-healthy fats which make this dish more satisfying.

Remember that these suggestions are just guidelines – get creative with your ingredients and try out new combinations. Whether you serve it as a side dish at a family gathering or bring it as a potluck contribution, this mashed potato salad is sure to be a winner!

When it comes to serving up a freshly made serving of mashed potato salad, there are a few different directions you can take to really let this recipe shine.

First and foremost, this dish makes for a fantastic side dish at all kinds of events. At barbecues, picnics, and potlucks galore, mashed potato salad is sure to be a hit with everyone gathered around the table. The creamy texture and bold flavors pair incredibly well with classic summer fare like hot dogs and hamburgers, but can also pack a punch alongside chicken wings or a hearty sandwich.

Make-Ahead, Storing and Reheating

One great benefit of this mashed potato salad recipe is that it can easily be made ahead of time for a party or gathering. Simply prepare the recipe as directed, let it cool to room temperature, and then cover and refrigerate until ready to serve.

If you are planning on making this dish ahead of time, I recommend adding a little extra Miracle Whip or mayo to keep the potatoes from drying out while in the fridge. It’s essential to cover the dish tightly with plastic wrap to prevent any air from getting in and causing the potatoes to discolor or dry out, which will make reheating much less appealing.

To reheat the mashed potato salad, either microwave it or heat it in a preheated oven at 350 degrees Fahrenheit for about 20-25 minutes (keep checking, don’t burn your yummy work) until heated through. The reheated salad may be slightly mushy from sitting for a while, so you might want to add some extra salt, pepper and herbs to refresh its flavor.

The good news is that mashed potato salad keeps well in the fridge for up to three days. If you have leftovers, transfer them to an airtight container and store them in your refrigerator promptly after serving. But please, remember to eat the leftovers within three days; otherwise, they might not taste as fresh and yummy as you’d like them.

Overall, this is an excellent dish that makes meal prep for parties straightforward—giving you plenty of time to focus on other things while it sits in your fridge waiting for party time.
