Easy Summer Hummus & Feta Dip!

Look who came to visit me after work yesterday!!!

Baby Dempsey!  Seriously one of THE most adorable babies on the planet. :D

MK is one of my good girlfriends whom I’ve known ever since my high school days (can’t believe how long ago that was my friends haha)… 

We also lived together post-college and had plenty of fun adventures in our “younger years”… ;)

Well it had been wayyyy too long since MK and I caught up with some good girl talk and yummy eats – so I was more than excited to have her over for all of the above :)

And luckily just the other day I spotted a recipe for this 5-Layer Greek Dip in a Kroger coupon book that Fanatic Mom gave me that I knew it would be perfect for us to munch on.

It also worked out that I happened to have a huge tub o’ Sabra hummus in the fridge thanks to the nice folks over at Foodbuzz…

And well, we all know the “feta situation” at the Casa de Fanatic ;)

Not a bad situation to be in me thinks! :P

This quick dip came together in no-time-flat and turned out really quite delicious!

Simply layer the following ingredients into a serving bowl:

  1. hummus
  2. crumbled feta
  3. diced cucumbers
  4. diced tomatoes
  5. sliced black olives 

No need to measure, just use as much or as little as you like!

Serve dip with pita crackers (or dipper of your choice!)

I served my dip with these new-to-me pita crackers:

(Original sea salt variety)

I really liked these Pita Bites and they went so well with the dip!

Crispy pita bites, creamy hummus, tangy feta with bites of fresh, crisp summer veggies – ymmmm-O.

Complimented a cool glass of white wine perfectly!

This dip is the perfect lil’ quick appetizer for a summer hang out or party. I’ll definitely be making this one again :)

And not only was the dip really tasty, but I had such a nice time catching up with my good friend (love ya girl!) and also playing with lil’ Dempsey!  It was the perfect way to end the mid-week slump, that’s for sure ;)

After some meetings this morning and getting through lotsa work, I was in serious need of a delicious lunch!

The most massive baked potato I have ever seen which was the smallest of the bunch… holy crap!!!!

Topped w/ salsa & sour cream.  I couldn’t even eat half, that says alot! :P

So what is everyone up to tonight?  Green beers all around?

Yea yea yea, so I’m not really big into the whole St. Patty’s Day thang and all, but I did wear green to work today to avoid being harassed by the fact that I wasn’t wearing green bc that is seriously so annoying post-elementary school.

The Man and I are going out on a date tonight since we won’t be seeing much of each other this weekend too (and I miss my bfffffff partner in crime seksi stud when I’m away!), I’m looking forward to it!  We were going to go somewhere festive but now I have a massive craving for Mexican and may look to my “true heritage” for comfort on this green holiday ;)

Hey, I never said I was a follower.

In fact, if you haven’t noticed, I like to shake the system if you will :P

Annoying to some?  But happiness to moi!
