Tomato, Lemon & Artichoke Topped Angel Hair Pasta

Check out how crazy the Richmond, VA Sunday night sky was last night after a storm rolled through!

I don’t make this stuff up people…

Kinda creepy…

Yet totally mesmerizing…?

The whole world seemed a bit golden for a bit with the shadows from this cloud formation… it was nuts!

But anyways, onto the food, story of my life ;)

This recipe was thrown together the other night on a whim…

It was an idea that resulted from the tons-o’-tomatoes still on hand and some artichokes that had been calling my name in the freezer (thank you Trader Joe’s :) ).

The final result of this throw-together meal was beyond what I expected.  The flavors were fantastic, and the meal was a hit.

Even though it may seem simple, somehow the combination turned out superb.

Kind of like 1 + 1 = 3, ya know (???) <– I am such a math nerd ;)

Tomato, Lemon & Artichoke Topped Angel Hair Pasta

Serves 4-5

  • 1 onion, chopped
  • 1 bag frozen artichokes
  • 3-4 large tomatoes, chopped
  • 2 cloves garlic, chopped
  • dried basil (about a tablespoon)
  • dried oregano (about a tablespoon)
  • sea salt and black pepper
  • 1 tblsp olive oil
  • crumbled feta to serve
  • fresh lemon juice to serve

Start by sauteing the chopped onion in olive oil over medium heat, until translucent (7-8 minutes).

Then add the frozen artichokes and a little bit of H2O.  Cook over medium until they warm through, adding more water if they start to stick.  Season with basil, oregano, salt and pepper too.

Lastly, add the tomatoes and garlic, stirring and cooking over medium for another 2-3 minutes. 

Boil the angel hair pasta according to direction.  And if you’re less hungry/forgetful than I was, you might just reserve some pasta cooking water to add to the sauce and make it “saucier” :P    

To serve:

Pile the tomato & artichoke mixture atop a bed of angel hair.  Then sprinkle with crumbled feta and top with a splash of fresh lemon juice. 

Please don’t forget this step mmmmkay :D  

The feta (which I’m still workin’ through that 10lbs thank you very much haha) adds a lovely saltiness & creaminess to the pasta dish. 

And the fresh squeeze of lemon really takes this dish’s flavor up to a whole ‘notha level!!

The lemon was Fanatic Mom’s idea to add too <— gotta give credit where credit is due ;)

This dish would also be  lovely topped with shrimp, scallops or even grilled chicken.

We chose to keep it meatless, just ’cause. 

Either way, the perfect summer meal!  Simple, clean, light flavors going on :)

Grayhaven Winery

Yesterday afternoon Fanatic Mom and I headed out and about to check out a winery that we had seen pop up at local farmers markets and food festivals this summer…

It was about a 30 minute drive west of town and definitely a relaxing one at that, right through the country!

I often forget how close I am to that rural border line, going from major shopping and restaurants to horse farms in a matter of minutes is pretty cool though :)

Upon arriving at the winery, down 32 different back roads ;) , we weren’t quite sure what to expect…

But once we walked through the door we were greeted with gracious hospitality and a line up of amazing wines to sample!

Along with learning alot about the winery and Virginia wine making, we got to taste the following:

  1. Sauvignon Blanc
  2. Seyval Blanc <– a favorite, a bottle made it home w/ me!
  3. Cabernet Franc
  4. Sojourn <– loved this red!
  5. Pinotage <– another amazing red, we had tastes from the last bottle! sold out :/
  6. Voyager <– impressive dessert wine, not too sweet w/ lots of apricot, loved!
  7. Mango Sangria <– enough said, wowza!

It was our lucky day and the winery crew happened to be mixing up some amazingggg mango sangria for a festival that evening and they were nice enough to let us give it a try!

Let’s just say that I know what summer beverage will be making it onto next week’s beach week drink menu ;)   Wowza!

And I must tell you, I’ve visited a few wineries in both Charlottesville and the Northern Virginia Region and the wines from Grayhaven were seriously top notch.  I enjoyed them so much!

Must be a reason they sell out year after year ;)

Along with chatting with the folks there and sipping on wine, they were kind enough to also offer us fresh bread, local cheese and tomato basil salad.

It was enough to have me looking forward to our next visit back, which will be in September for their South African Food & Wine Festival :)   Excited!!!

On the way home we made a stop off at one of my favorite local butchers, Nadolski’s Butcher Shop, for some serrano ham which I have been craving ever since first trying it weeks ago.

A quick appetizer platter featuring serrano wrapped canteloupe, fresh cheese, stuffed grape leaves and marinated olives was definitely happenin’!

Serrano ham just melts in yo’ mouth – it is SO GOOD!! 

Of course there was also a little dinner action featuring more of the delicious tomato bounty from my friend Patti. 

This recipe turned out super delicious and I can’t wait to share it with you guys….

Let’s just say that fresh tomatoes, artichokes, onions, garlic, lemon and feta are not a combination to be overlooked!

Mmmm hmmmmmm.

I sure don’t let tomato season pass me by, that’s for sure! :P
