Spicy Swiss n’ Mixed Greens Enchiladas

It’s been wayyyy too long since I’ve done a recipe featuring my beloved Chobani

Am I right or am I right?! ;)

And since we are rounding the corner to Cinco de Mayo – I thought, why not throw in some savory mixed greens, tangy Swiss cheese and spicy tomatoes to make it a Mexican-inspired meal?!

Spicy Swiss n’ Mixed Greens Enchiladas

Makes 6 enchiladas

  • 1/2 onion, chopped
  • 16 oz. bag frozen mixed greens (collards, kale & mustard greens)
  • 4 oz. grated Swiss cheese
  • 2 10oz. cans Rotel mild diced tomatoes & green chilis
  • 1 6oz. container plain Chobani Greek yogurt
  • 6 whole wheat tortillas
  • 1 tblsp olive oil
  • 1/2 cup water
  • sea salt & black pepper to taste

I love these frozen mixed greens from Whole Foods! 

I think their slightly bitter flavor, paired with the Swiss cheese, really makes the dish…  but any frozen greens will do :)

Saute the onion in 1 tblsp olive oil, over medium heat, for 5 minutes. 

Then add the frozen mixed greens and water.  Season with salt & pepper and cook another 10 minutes.

While the greens are cooking, combine your Chobani and Rotel in a medium size bowl to make the sauce (just give a quick stir using a spoon).

To assemble:

Wipe a bit of olive oil on the bottom & sides of a baking dish (one large enough to hold 6 enchiladas) then top with a few spoonfuls of the Chobani/Rotel mixture.

Then top each tortilla with a few spoonfuls of the greens mixture…

Grated swiss cheese…

And roll up and place into the baking dish, seamside down.

Top with the remainder of the sauce mixture, to cover.

Then place into a 350F oven for 20 minutes, until bubbly and melty.

If you’d like more cheese on top then feel free to add it too! 

The enchiladas get nice n’ creamy from the yogurt sauce while not turning soggy at all.  No one likes a soggy enchilada ;)

The greens make a perfectly hearty filling when combined with the gooey swiss cheese.

Seriously, if you make this, use swiss cheese!  I think any other cheese would be just dull in comparison :D

The swiss marries with the tangy greens oh so wonderfully I tell you…

Plus the sweet n’ spicy tomatoes, oh my!

So warm, comforting and delicious without being super heavy & filling.

This one’s a repeater, that’s for sure!

Perhaps I’ll continue with this series of “meals I could never make before when feeding both The Man and I…”?
