Outer Banks Bound!!

We made it to the OuterBanks ya’ll! :)

After treading through a few rain storms and some major smoke haze (forest fires!), the clouds (and smoke?) parted ways and we finally reached our destination…

Ahhh North Carolina shore, how I’ve missed thee.

IPhone pics are dominating this post, just sayin’.

Not without a stop at my favorite farmers market on the planet first though!

Glorious North Carolina tomatoes.

Clearly we had some serious shoppin’ to do haha, hello mega cart? 

I’m most likely going to get busted for postin’ this picture ;)

We stop here every trip down and it never disappoints.  This year’s haul included tomatoes (duh), fresh corn, green beans, peaches, fire roasted salsa and banana pudding bread.

I also gave their tractor churned peach ice cream a try too.  Keep churnin’ tractor, that ice cream was goooooood!

 I may or may not have focused on sipping adult beverages last night in lieu of takin’ pics of our delicious dinner… sorry guys, but the DSLR photographer needs a vacation sometimes too ;) .

Lil’ Sis did capture this gem of a picture though, lucky me.

Let’s not talk about (1) the 1992 swim team t-shirt I am sporting and (2) the “I just rode out a tornado” hair-do I have goin’ on.  Okay, glad that’s settled ;)

But I just had to share this picture because this corn from the Morris Farmer’s Market has been declared best corn of the season!  For real.

It was so sweet, juicy and good with just a pinch of sea salt and a crack of black pepper.

Corn. Heaven.  <— I was there.

We had some pretty awesome burgers and an overflowing side salad to go with our corn.  Just imagine it mmmmkay :P

 Today’s plans include some morning yoga, lots of beach time, the arrival of the third amigo and plenty more adult beverages I’m sure.  Helllllloooooo vacation!

I’m also thinkin’ that fresh North Carolina seafood is on the menu tonight.  I’ll remember my camera this time hopefully.  ;)

Pool Day, Cooking Demo & Tons O’ Feta!

Happy Sunday everyone! 

Hope ya’ll are having a wonderful weekend :)

It’s been a relaxing & wonderful one over here for sure – yesterday was just an absolutely picture perfect day.  Temps in the 80′s, sunny blue skies with a few clouds, *sigh* what a day!

The pool and I got very well acquainted and it was gloriousssssssss ;)

It was also the perfect day for my cooking demo over at The Farmers Market at St. Stephen’s!

Fanatic Mom was my photographer and sign-maker – love it

I showed the farmer’s market visitors how to make this Summer Vegetable, Mint & Quinoa Salad.

It was so much fun talking about the different ingredients in this dish, especially quinoa which not everyone has used in their kitchen before.

And if you know me, you know how much I loveeeee to talk hahaha, especially if it’s about food… (hey, at least I’m honest ;) )

Back at it! :P

Here was the finished product, a quick version of the original as I didn’t have the tools to cook the fresh corn and beans.

But puuurty none the less!!!

I enjoyed doing the demo so much, whyyyy can’t I just get a Food Network show already, just one episode is all I’m askin’ for lol. 

Ahhhh that would be my heaven :)

After the demo wrapped up I did a bit of shopping for ingredients for dinner that night and for the week.

You can’t tell me this isn’t the cutest most perfect tomato you’ve ever seen.

I mean seriously?

The evening’s adventures included another round of these amazing peach drinks (courtesy of the fabulous IowaGirlEats!)

This round was made with a doughnut peach (<— ever had one? do it. they are so sweet!) and was super delicious and refreshing.

I also got to experimenting with that 10lbs of feta I mentioned before.

Let’s just say that 10lbs of feta goes a longgggggg way hahaha (thanks for all the great recipe ideas, ya’ll rock!)

Let’s also just say that feta + jalapeno + mint are a serious trio from the heavens, who knew?

This recipe turned out to be a huge hit with both me and the Fanatic Fam!!  Such a unique flavor and one that I’m already craving again… pretty sure I’ll be making it again this week I think. Yep.

And hopefully I’ll be able to share the recipe with you friends soon too… :)

P.S. The curry chicken from earlier in the week strikes again!  It was so flavorful & easy that we couldn’t resist a round two.

Well I better get to it.  Lucy Dog needs a serious walk (hello energy!) and I need some serious yoga.  Then it’s another pool day and afternoon in the kitchen with my beloved feta lol.  Shapin’ up to be a great Sunday!
