Eat for $1.00: No-Soak Pinto Beans

I found these dried pinto beans on sale at the grocery store a few days ago and for some reason they just had to make their way into my shoppin’ cart.

You can’t tell me that things that cost $1.00 don’t sucker you in like that too… ?

Not only are they totally on the cheap, but I really like the texture of dried beans once cooked versus their canned counterparts too.

But let’s face the facts, we don’t all the 6+ hours to soak the darn things plus the 2 or so hours to sit around and watch ‘em simmer on the stovetop, now do we? ;)

That’s where my new favorite kitchen friend comes into play once again!

If you have some water and a few hours away from home, these beans can be all yours too for the fine price of one Washington hahaha. Just sayin’… :P

No-Soak Crockpot Pinto Beans

  • 16oz. dried pinto beans
  • water

Simply sift through the dried beans to pick out any stones and/or foreign objects (I didn’t find any in my batch).

Then place them into the slow cooker with enough liquid to cover by about 2 inches.  Place the crockpot to high and let cook for 6 hours.

Voila!

This made close to six cups of pinto beans!  Now that’s a lotta beans…

All for $1.00. And ready to be used in many a delicious recipe :D

P.S. you can freeze any extras for later use too. They’ll last for quite some time.

Simplest “Roasted” Chicken

Want in on a little secret? 

A secret, that although not quite as great as a secret surprise birthday party for one of your best friends’ 30ths…

… but a secret that will lead you to a meal that is 100% company worthy every time? Since in my opinion, it’s about as comforting & tasty as comforting & tasty gets :)  

All you need?

  1. 1 whole chicken (about 3 pounds)
  2. spice blend of your choice
  3. crockpot

This “recipe” will never fail.  That is something I am most assured of.

Well, I mean, unless your power goes out or something.

But let’s not get crazy now.  Even if it did happen to me once.  While cooking said whole chicken. But that’s a lil’ story I’d rather not rehash mmmkay ;)

The spice blend I chose was this South African sweet & smoky rub.  Which I picked up at the Greyhaven wine festival this past summer. 

And which is ridiculously delicious with smoky flavors plus hints of sweet sugar, tangy garlic, coriander, cumin, and ginger!

But you could use any blend of spices you like.  Here are a couple I’ve tried before: 

  • chili powder, cumin and garlic (powder)
  • fresh thyme, sea salt and black pepper

The chicken was fresh, antibiotic & hormone free from Whole Foods

The Whole Foods 5-Steph Animal Welfare Rating scale is new to me, but I am interested to learn more as I think it’s a great step in the right direction.

But I won’t get into a discussion on that… another topic for another day ;)

Using a whole chicken is such an economical way to eat quality meat for a good price.  Especially if you watch the sales and get said chicken for $1.29/lb.

Psh, who ever said that eating quality meat has to be $$$?  Not I! :D

$3.91.  I think even Mini-Fanatic could “splurge” on this one on her college-girl budget ;)   Just sayin’…

Want to know what this “recipe” took to complete? 

  1. Placing the whole chicken into the crockpot then rubbing it with the spice blend. 
  2. Closing the lid and letting cook on low for 7 hours.

That. Is. It.

And want to know how ridiculous the finished product turned out?

Simply irresistable.

Totally fall off the bone. Super moist.  And just perfectly wonderful.

    

This way of cooking a chicken is not only easier than 1-2-3, but results in the most amazing dinner every time.  Totally company worthy when paired with a few good sides IMO!

Or if you’re me, totally dinner worthy when served with spicy green beans w/ chipotles and a monster glass of vino ;)

Even reheated the next day and spooned onto a corn tortilla with spicy salsa, this chicken never fails…

 

And p.s., leftovers don’t dry out at all upon a quick reheat in the microwave.  #winning!

So there you have it.  A meal that takes minimal prep & effort yet results in maximum satisfaction. Love when the cooking ratio is out-of-balance like that ;)
