Weekend Collage

Gifted tomato plants.  Let’s see how this whole green thumb thing goes!

1

Spring weather. Fan Fridays. Not real life cats.

2

No better place than outside. I agree Leo, I agree!

3

And let’s talk about these sunglasses. Which I need in my life asap!

Osaka Sushi & Steak.

Crunchy Shrimp, Lump Crab, Avocado, Cilantro, Rice.

5

Beets. Salmon Sashimi. Sweet Tapenade.

 6

Still a dish of my dreams. So so SO good!

And what would Cinco de Mayo weekend be without Skinny Margaritas?

7

And Chicken Enchilada Zucchini “Lasagna” :)

8

With some of my favorite people.

9

Oh and by the way. I’ll be recreating that enchilada combo vegetarian style later this week for you. And I think you’re gonna love it! Or at least I hope so :D

What was your favorite part of the weekend?!

Weekend Eatz

Doesn’t Cinco de Mayo’s passing now mean that summer is officially around the corner?!

I.think.so :)

Cha Cha’s. $3 margaritas, shrimp tacos, chips n’ salsa.

I was actually surprised by how much I enjoyed the soft tacos at this place, which I tend to think of as more of a bar-scene. Think they added Old Bay into the mix which was really unique and tasty?!

Cinco isn’t complete without sundresses too, of course :P

Even if it did turn cool and rainy at the drop of a sombrero!

Aside from the Mexican dining-out fare there were also some south-of-the-border inspired treats at home…

Quesadillas with seriously some of the best spicy pepper jack that has ever to hit these lips :)

Need.More.Asap.

Oh yea, and apparently it’s mango season already… ?

Because this lil’ mango – which made its way atop a  most delectable salad w/ avocado, tomato and cilantro - was at the peak of sweet ripe deliciousness!

So good.

And what weekend is complete without a few more beverages? ;)

And quite possibly the best salad I’ve ever had?

It tasted like strawberry shortcake. Don’t ask me how, but it did, and is probably one of my new favorite things everrrrrr.

The Blue Goat. Manakintowne mixed field greens, hydroponic tomatoes, sliced strawberries, gorgonzola with balsamic rhubarb vinaigrette.

Pretty much in love with this restaurant ever since trying it out on last week’s Real Richmond Food Tour by the way.

Know what else I’m pretty much in love with since that lil’ tour

Yep. Pearl’s Cupcakes.

I may or may not have showed up at their front door right upon Saturday morning opening…

Nothing says 10:30am like a margarita and mint julep cupcake now does it?

Thought so.

I guess maybe a side of iced coffee to make it a proper breakfast ;)

If you’re in Richmond and haven’t tried these cupcakes yet… what are you doin’?! Go. Go now.

Dessert can be eaten any time when it tastes this darn good, right? ;)

Hope y’all had a fabulous weekend!!

You know it’s never a dull one around here :D

See you back for a spicy delicious stovetop recipe soon!

Cinco de Mayo: A Tribute to Mexican-Inspired Flavors!

I think it’s no secret around here that Mexican inspired flavors are by far my favorite ones to whip up in the kitchen and place onto my dinner table.

Easiest Ever Cheese Enchiladas

There’s something about the cuisine that just captivates me…

Mexican Chicken Soup for a Crowd

Perhaps a love of all things spicy coupled with an affinity towards fresh, bold yet simple, comforting flavors.

Yucatán-Spiced Chicken w/ South of the Border Orecchiette Salad

And ever since this little read I just can’t seem to get enough!

Mexican Chicken and Potato Stew topped w/ Spicy Slaw

There’s so many fabulous ideas for south-of-the-border eats aside from the usual taco and enchilada too…

Mango Ricotta Enchiladas

Although who doesn’t love a good twist on that ol’ classic?! ;)

Mexican “Lasagna”

Mexican cuisine is truly so much more. And I just.can’t.seem.to.stop!

Huaraches w/ Chicken & Refried Beans

So here are a few of my favorite Mexican-inspired eats, right outta my kitchen to yours…

Mexican-Spiced Chicken Tacos w/ Corn & Summer Squash Saute

Just in time for Cinco de Mayo.

Exploding Chicken Taquitos & Chili Slaw

Which I’ll be celebrating tomorrow with some fabulous eats, friends and well, you know…

Priorities, people ;)

Spicy Swiss n’ Mixed Greens Enchiladas

Hope you enjoy some spicy flavors and good times this weekend too!!

Black Bean Soft Taco w/ Fresh Mango Salsa

Happy eating :D
