Chocolate Dipped Vanilla Sugar Cookies

Even though I went and got all crazy with those Bacon-Apple Cider biscuits just the other day, I think it’s fair to say that on a normal day I’m not the biggest fan of baking…

I know. I know. But it’s true.

Too many measurements and too little room to fudge the recipe for this girl (what do you mean I can’t add a “lil’ more of this and that” to the cookie recipe?)… both being things that just don’t work for me in a kitchen setting haha.

So sometimes (most of the time?) taking a store-bought short cut is the way things go around here.

Take these for instance, which were on a nice 2 for $4.00 sale at the local Whole Foods:

Hey, like you could resist THAT offer either?! ;)

But instead of just leaving them alone, I thought that hey, there’s just no reason that a store-bought short cut treat can’t get fancied-up with a little something extra now is there?!

Like, say, ohhhh a bath in some melted chocolate perhaps… :P

 

Don’t mind if I do.

I baked the cookies per the directions and let them cool. 

Then simply melted a few hershey kisses with a touch of canola oil (to keep the chocolate smooth) right in the microwave and gave these cookies a good dunk, placing them on parchment and into the fridge for a few to cool.

Now how  much more exciting is that than just your normal every day sugar cookie?! :)

 

Pretty easy and definitely fun!  And they just look so darn pretty too :D

I spotted this recipe just yesterday… and by today it was happenin’.

What can I say, when I know I like something I don’t waste any time! ;)

And I’m glad I didn’t… these are INSANELY GOOD!!!

Plus they only require 5, read it, 5 ingredients.  And just a minimal amount of your time. #winning!

So basically, moral of the story:  drop what you are doing and go make them.  Now.  You think I’m kidding.

No-Bake (Vegan) Chocolate Coconut Bars

Recipe courtesy of Gabriela @Une Vie Saine - here’s my variation.

  • 1 cup coconut oil, divided
  • 3 cups oats, divided
  • 1/4 cup brown sugar
  • 1/3 cup finely shredded coconut
  • 1 cup chocolate chips + few for garnish

The original recipe didn’t state when to add the shredded coconut, so I kind of decided to do things my own way.  On accident.  But whatever… I won’t get into that :P

Layer 1:

  • 1 1/2 cups oats
  • 1/2 cup coconut oil
  • 1/4 cup brown sugar

     Warmed on the stovetop until combined, about 3 minutes over low.  Then pressed into a baking dish and placed into the freezer for a few to firm up.

Layer 2:

  • melted chocolate

     Placed into a Pyrex dish and microwaved at 50% power in 45 second  intervals, stirring each time, until melty and gooey.  Drape evenly over Layer 1.

Layer 3:

  • 1 1/2 cup oats
  • 1/2 cup coconut oil
  • 1/3 cup shredded coconut

     Warmed on the stovetop until combined, about 3 minutes over low.  Then pressed into a baking dish and garnished with a few extra chocolate chips for fun! 

Back into the freezer for a few more minutes to firm up.

Slice ‘em up and serve!

Holy moley chocolate coconut yummmmmmmmmmmmminess.

Maybe it’s because I could technically be considered an “extreme coconut” fan, or maybe it was the smooth chocolate paired with the chewy oats and the melt-in-your-mouth coconut oil that did it for me.

Who knows.

But what I do know is that these were SO incredibly good :)

And if you’ve never “baked” with coconut oil I’d give it a whirl.  It adds such a great flavor and fun texture to a dessert, firm and held together when cool then just melty n’ creamy once it hits your lips.

Does that make this a “health food” of sorts? ;)   Just sayin’…

This recipe ended up making 25 bars (squares). I have a feeling I’m going to have some very happy coworkers tomorrow haha.
