Sesame Cilantro Chicken Sausage Stir Fry w/ Pak Choi

Pak Choi.

Aka Bok Choy.

Or Chinese cabbage.

Spotted at one of my favorite stands at the farmer’s market this past weekend.

You know I couldn’t resist. I just love this stuff!

Here’s what I came up with.

6 ingredients. Easy peasy. And super tasty.

1. Pak choi.

2. Fresh cilantro. 

3. Lou’s Famous cilantro chicken sausage.

4. Dark sesame oil

5. Soy sauce.

6. Garlic

That’s it.

Well except for some spicy pepper flakes or sambal oelek for serving and maybe a few spoonfuls of rice or quinoa as well :)

Brown up the chicken sausage for just a few minutes. No oil necessary. 

Remove sausages from the pan but leave all that flavor!

Add the sesame oil and the chopped pak choi right in.

Wilt a bit before adding the chicken sausage and garlic.

Another minute or two then in goes the soy sauce and fresh cilantro.

 

A quick stir n’ heat and you.are.done!

Served over quinoa. Or rice. Or noodles. Or whatever.

But not without some spicy sambal or sriracha to top ;)

Or even just a dash of red pepper flakes if that’s your thing.

Say cheese :)

Or sambal?

Just sayin’… ;)

CookinFanatic in the New York Times?!

Around 10pm last night THIS came through on Twitter:

Yes. Lil’ CookinFanatic was in the NEW YORK TIMES today?!?!

Is this even real life?

Needless to say I didn’t get much sleep last night from all the excitement ;)

And as if you aren’t on overload yet, have you had the chance to see the funny promo for the Chobani commercial?

I laughed pretty darn hard the first time I spotted this one hahaha!  Definitely check this bad boy out.

FUN FACT #3:  “Dan the Accountant” is actually a familiar face that you may recognize if you remember the Olsen Twins spin off “Two of a Kind” <— does anyone else remember that show?!?!

So after a super busy day yesterday, I knew that I wanted an easy to prepare dinner that could get on the table in no time flat.

And since I didn’t get to start making dinner until close to 8pm, this was definitely a fast n’ easy treat!

Thankfully the kind folks at Foodbuzz had sent me a coupon to try out one of my favorite go-to frozen product brands, Alexia , which I had stashed away for a night such as this.

I chose the Chipotle sweet potato fries since I hadn’t yet had them and they sounded delicious!

Disclosure:  As part of the Foodbuzz Tastemaker Program, I received a coupon to try an Alexia product free of charge.

The seasonings on these were spot on, really enjoyed them.  I wish they were a bit crispier though, however that could have been my fault (eh hmmm over crowding the pan much?) :P

Another easy go-to were these Whole Foods Market green onion chicken sausages.

These were awesome! 

The flavors of cinnamon, allspice & ginger really added a wonderful complexity to the tangy green onion & mild chicken flavor.

Would definitely purchase these again!

And don’t forget some North Carolina shrimp, from just down the road…

These were super fresh & jumboooooooo!

Us southerners love our Old Bay?!??!

Finished off with a crisp side salad and call it a dinner :D

Phew!

Well tonight I’m going to relax and watch some quality tv with The Man. 

Can I get an American Idol, Grey’s and Jersey Shore shout out?

Yes… I know.

My television taste may not be quite as refined as my yogurt taste ;)

Tomorrow I’ve got a great recipe w/ a play on classic flavors for you plus another fun lil’ Chobani commercial shoot fact and even some more fun!!  It just keeps on coming doesn’t it?
