Sweet n’ Spicy Blueberry Salsa

I think I’ve found a new summertime love…

 

And no, your eyes are not deceiving you.

Those ARE blueberries that you’re seein’ in that there salsa mix ;)

Plus a lil’ sweet bell pepper, spicy cilantro, tangy lime and fresh cilantro!

 

For some reason I just can’t get enough of sweet fruit these days…

Outta the norm for this lil’ lady - veggie lovah alltheway!?! :P

But there’s been somethin’ about the lure of sweet berries that lately I just can’t seem to resist…

Especially when paired with a unique array of flavors such as this.

Inspired by a Whole Foods find that my girl Megan surprised us with just a few days ago!  So fun :)

Whether enjoyed atop a fresh crisp bed of greens with some sweet strawberries…

Or layered into a warm corn tortilla with some simply spiced tilapia…

And topped with fresh lime & avocado.

This salsa has totally stolen my summer heart <3

 

And I think that it just might steal yours too ;)

Super-secret snapshot

HAPPY FRIDAY!!

I can’t begin to explain how fulfilling that is to say that after a full, hard-working week at the ol’ jobby jobby :D  Such. A. Nerd.  LOL.

Well it’s rainy here, but I’m not letting that get me down today.  Nope.  I’m so pumped for this weekend, we have nothing major planned except hanging out & takin’ it easy!

For me, there’s nothing better than just that to combat a 3 day rain forecast? :P

We do have plans to try out this new restaurant tonight though, I am really looking forward to this!

Ever since my dabbling with Indian cuisine a few weeks back, I have been harssing my boyfriend to take me dying to go out and try more!

This restaurant has gotten some pretty fabulous reviews since opening – check them out here and here :D 

And of course I have been reading through them & the menu to see what I may order (you know you’re a foodie when?) and about squealed with delight at the fabulous choices (one including:  Crab Asparagus Kofta – Crab Meat and Asparagus Dumplings in a Coconut Mustard Sauce) ;)

I know that I won’t really have much to compare to, since I am an Indian-food-novice and all.  But either way I know it’s going to be yummmmmmy.

So how abouts we break down the eats for today, shall we?

Snackage

Plain yogurt, frozen blueberries & shredded coconut

Lunchage

Leftover veggie “mess” with melted colby jack

Dessertage

Foil wrapped chocolate eggs balanced out with a Pure2Raw Cocoa Kreme ;)

Oh yummmm, my belly is a’happy!

HAHAHAHAHAH So I just loaded up my pictures from my camera to computer and found this super-secret snapshot that The Man left for me capturing the MASSIVE amount of tupperware he had left at work from lunches during the week…

THIS IS RIDICULOUS.  No wonder my tupperware shelf was empty?  Grrrr Men! :P

Well guess it’s time to get back to work, we’re in the final stretch here!  I hope to get out in time to squeeze in a workout before dinner, since Verizon sucks at all things life I didn’t get to yesterday.  If not,then I think I have a pretty good backup plan ;)

Then it’s off to get my Indian cuisine on!  I’ll be reporting back, obvi.

Hey hey hey!

Can I interest anyone in a Lucy sammich? ;) 

She’s such a trooper…. her and The Man are always getting into something haha!

Anywho, in food news, I just finished eating the most gloriousssss bowl of “iced” oat bran :)

Let’s just talk about how good oats taste after not eating them for a week…. aight?

I think it’s safe to say that I am completely obsessed with So Delicious Coconut products, check out the new one that I picked up today!

Sorry for the blur, apparently my camera is on pain meds too ;)

OH YES, that would be a carton of coconut milk which pretty much equates to a carton of pure lurve.

Not eating dairy may be the best thing that’s ever happened to me, no lie.

I have decided over these past few days that my favorite food in the whole entire world is coconut, hands down.  Any way you can eat this stuff I’m game, I’d slather it all over my body if I could (eh hmm and maybe I do haha :P)

Just cooked 1/3 cup oat bran on the stovetop in a mixture of 1/2 cup H20 and 1/2 cup coconut milk, stirring in frozen blueberries towards the end.

And then the magic happened….

“Oh it’s just a little frosting.”

“Frost-ing?”

“Ladies… frost yourself”

Can anyone name that movie?  Here’s a little hint :D

In addition to these most wonderful oats, I whipped up another Sweet Potato/PB/Coconut mash…. in which Fanatic Dad requested a small bowl of (yipppeeee!)

 

Ya’ll this combo of flavors is legit ;)  Confirmed.

Well the rest of the day will be spent just taking it easy and continuing the recovery.  My energy levels aren’t where they normally are, as is to be expected! 

Dinner plans are probably the usual suspects for moi, however The Man needs to eat too so I’ll be in the kitchen tonight whipping something up for him :)
