That’s right. A hearty meat-free option that really only involves opening some cans and doing a bit of stirring. Oh yea. And costs like $4 to make.

Think we can all handle that here, no??

Fire roasted tomatoes. Tomatoes. Black bean. Kidney beans. Corn.

Sweet potato. Onion. Garlic. Poblano peppers. Cumin. Chili powder. Oregano.

This isn’t rocket science here. But it sure does taste good!!

  5. Yummm!!! I am loving chili right now too! I am definitely in the “add all the veggies” category of chili, though. I love putting in diced peppers, zucchini, or even okra into my chili. Almost like a bean/meat heavy, spicy minestrone. Although I haven’t tried it with sweet potatoes – I might have to add that in next time! Nothing says fall quite like sweet potatoes! I
