Ohhhhh Mondayyy morninggggg… *yawn*
Is it Friday yet??
Oh. What’s that you say…
Not yet? Oh well. So much for that…
Well another week is upon us. And as much as we all wish it was still the weekend, how would we truly be able to appreciate those few days if it wasn’t for the grind of the typical work week?!
Especially if your work week is as enjoyable as mine have been lately
But I digress..
There definitely is a certain allure of the thought of that Friday afternoon and the free days that follow. Especially when they include warm sunny Friday happy hours by the riverside.
Being the “taste testers” for your chef friend’s Oysters Rockefellar special at Aziza’s for the night. Hey, somebody’s gotta do it?!
Listening to great bands in fun hidden locations. The Northerners at the The Speakeasy.
Warming up with some delicious veggie white bean chili –> recipe here <— when the weather takes a turn back into winter wonderland.
Or maybe channeling your inner tropics with zesty shrimp tacos once the ?snow? starts falling a day after you’re sitting by the river in short sleeves — Richmond weather for ya!
Shrimp marinated in this lovely Williams Sonoma Tequila Agave marinade then grilled, stovetop style.
Placed into a warm corn tortilla and topped with cabbage, fresh salsa and a “crema” made with the one and only Chobani, mixed with a squeeze of fresh tangy lime & a sprinkle of spicy chili powder.
And maybe. Just maybe. You’ll finish that weekend off with another Cho-spired dish, hearty and comforting when the temps reach their lows but friendly on the waistline
This zucchini “lasagna” with Italian-spiced ground turkey and a cheesy broccoli topping a perfect way to top off a weekend. No noodles in sight!
And of course, recipe coming soon
Hope all of you had a fantastic weekend and a similar start to the week, enjoy!

Friday was so lovely, until I left the nail salon at around 6 pm to find it had dropped 20 degrees and the wind was blowing like a hurricane. Oh this schizophrenic weather…
