How about some veggie white bean chili for your snowy Saturday?!

And yes. I’ve been to the store today.

And while we’re on the topic of pictures…
I promise that’s not string cheese topping this chili in the picture below too. Kinda like I “promise” that I didn’t wear my pajamas to Fresh Market today.
This soup-meal was perfect and lasted for days in the fridge, making some deliciously yummy leftover lunches and dinners

Veggie White Bean Chili 1. Add onion and green pepper to pot over medium with 1 tblsp olive oil. Saute until soft, 5-7 minutes. Add garlic and cook another minute or two until fragrant and season w/ salt and pepper. 2. Add beans, tomatoes, spices and water to pot. Bring to a boil then turn down to a simmer, covered, cooking for 20 minutes. 3. Add squash and corn, cooking another 10 minutes or so until warmed through. Serve, topped with grated cheese and hot sauce (if you) please
