This recipe ended up as a version of a picadillo that I made many moons agoalmost 3 YEARS?? just suprised myself there. hello long time!

And this time around I’d consider it a new, improved yet unconventional version of the dish.

Plus it’s easy. And low in fat!

  • Sweet apple maple ?breakfast? chicken sausage in lieu of ground meat
  • Fork-tender potatoes to soak up all the delicious sauce
  • Sneaky spinach for some added veggie power

And microwave red potatoes (what?) that turn out perfectly when steamed in the bag for 9 short minutes. These are freaking amazing. The end. Sincerely, #Ihatebakingpotatoes

Moving on…

So what is picadillo you ask?

A traditional dish in many Latin American countries made with ground meat, tomatoes and other ingredients that vary by region.  The Cuban version usually includes ingredients such as peppers, onion, garlic, cumin, oregano, olives, raisins and olive oil.

As we all know by now, I just adore contrasting flavors like this. Sweet tomatoes and raisins. Salty olives. Lil’ bit of heat. Contrast contrast contrast. But all together, it just works!

Trust me… or at least watch and see 😛

To start, a simple saute of onion and garlic in this hot pepper olive oil.

Trader Joe’s. You complete me.

But of course, any olive oil will do!

Tomato sauce.

Seems “normal” enough so far… 

Who likes “normal” anyways 😉

And then… watch this!

Spicy cinnamon & cumin. Sweet plump raisins. Spicy red pepper flakes. Salty pimento stuffed olives.

Talk about flavor overload here….

Not so “typical” anymore eh?

But trust me. It’s gonna work!

Let’s play a lil’ game of “Guess Who” here shall we?

Upon walking into the kitchen “It smells ummmm interesting in here….” 

Well well. We shall see now shan’t we oh skeptical one!

Sweet maple apple chicken sausages. Tender red potatoes. Leafy green spinach.

Then served!

With an additional spoonful of spicy sambal for a certain someone (who me?)

And guess who went back for seconds and also requested leftovers for the next day… *hint: it wasn’t just me*

So yea.

Even the skeptics really enjoyed this one!! 😉

And I think you will too!

Such a warm, hearty and comforting meal. Clean ingredients. And not alot of fat and calories….

And p.s. – if you don’t eat meat then I bet chickpeas would be a wonderful substitution for the chicken sausage here.

This meal is definitely something that you don’t have everyday but something that after just one bite, you just might want to 😀

  3. I saw another picadillo recipe recently and have been going back on forth on making it because Tom claims to hate olives. However, I think with all these delicious flavors maybe he wouldn’t mind? Looks so good!
