Do you ever just see a recipe and know that it’s just gonna be that good?
My exact thoughts after stumbling across these Iowa Girl Eats mini BBQ cheddar meatloaves!
This girl’s got some fabulous food ideas might I add
Since I had some ground turkey on hand and the most amazing apple butter bbq sauce that needed using, I modified her fabulous idea into one that fit my ingredient profile…
And a quick change-up by not caramelizing the onion ahead of time was a much welcomed short-cut to fit my busy-night-before-Key West-schedule!
These turkey loaves came together in no time and baked up just perfectly in the oven too…
And with a side of mac n’ cheese & mixed veggies were definitely a recipe that will be added to my dinner dish repertoire!!
Maybe yours too?
Up next…
Told you I’d been doing at least some cooking around here!
Low fat. Cheesy. Egg noodles. Spinach. You catch my drift….?
This recipe turned out so much better than expected that (1) I surprised myself and (2) I can’t wait to share and (3) a certain skeptical someone may have eaten two helpings with their dinner
I mean, just sayin…
See you soon!!
BBQ Cheddar Stuffed Turkey Loaves – IGE Inspired * I used McCutcheon’s apple butter bbq sauce but any sweet bbq sauce will work 1. Whisk egg in a large bowl. Stir in onion, garlic, panko and a sprinkle of s&p. Fold in ground turkey, bbq sauce (set aside spoonfuls to top loaves) and cubed cheddar cheese - get those hands dirty! 2. Form into 4 smaller oblong shaped loaves and place onto lightly oiled baking sheet lined with foil. Spoon remaining bbq sauce on top, spreading evenly. 3. Bake at 375F for 25-30 minutes or until meatloaves are cooked through all the way. Serve!
Makes 4 loaves
