This past Sunday night I had one thing on my mind:  grilled cheese.

Okay I’m lying, I also had the new episode of Revenge, the upcoming long weekend, ginger ale (?), fall shoe shopping, holiday beach vacations and a few other key life things on my mind. But you know what I mean 🙂

Not sure if it was the fact that I was more than exhausted and feeling a little under the weather… or just that grilled cheese is such an underrated yet simply delicious meal?

I mean am I right or am I right.

And what better to go with grilled cheese than tomato soup? While we’re on the topic of being right… 😉

 

So instead of going to the store to pick up your out-of-the-can version, I decided to throw some together at home.

Which worked out perfectly, because somehow I just happened to have a set of ingredients that I knew could get me there!

Meant to be? Me and tomato soup. Go figure.

 

“You’re going to make the tomato soup? Don’t you just want me to pick some up at the store?”

No. Clearly someone hasn’t learned enough about my aversion to canned soups or my desire to live like I’m 80 and not let anything go to waste 😉

I mean I DID have a half used can of tomato sauce from sloppy joe night that HAD to be used and all… lol.

Plus. This was just too easy!

A bit of onion and garlic into the pan with some olive oil, salt and pepper.

Followed by tomato sauce, diced tomatoes, oregano and basil.

 

What’s so great here too, if you don’t have canned tomatoes just throw in some more sauce. Or vice versa.

We’re all about flexibility in the kitchen here, cooking should be fun! 😛

A minute or two to simmer then in goes the chicken broth.

 

A quick stir and another simmer for a few and you are ready to smooth this soup out.

If you don’t own an immersion blender I’d highly recommend buying one or asking for it for the holidays. Seriously makes at-home soup making such a breeze!

I mean, we’ve all been there with the hot soup / blender explosion now haven’t we 😉

A quick spin with the immersion blender and some half and half later and it was time to make the grilled cheese.

Simple sliced wheat bread, mozzarella cheese and a few pats of butter into the pan…

Cooked on both sides until golden brown and melted to perfection.

Then sliced into crouton cubes, and served atop the rich creamy tomato soup!

And your one bowl dinner is on the table in no time.

Who needs a can when you can have something this fresh and delicious in a matter of minutes? Trust me, if I could throw this together that particular Sunday night, you can too! 😉
