This past weekend after a day full of rain and temps wayyyy cooler then the summer norm, all I could think about was a comforting bowl soup…

First soup of the season?!

Enter: chicken soup. A dish that makes the house smell of cozy warmth and tastes just like comfort should taste 😀


So I decided to take a south-of-the-border spin on this classic, mixing in spicy tomatoes w/ diced chilies, fresh lime, cilantro and a few green peppers.

Because let’s face it. Anything with a south-of-the-border flair makes this girl happy happy 🙂

The result? A hearty bowl of pure joy, which when topped with some crunchy tortilla chips and a dash of hot sauce, could make any Sunday blues float right away… !


A simple start with onion, carrot, green pepper, celery and garlic.

Some chicken broth, diced tomatoes & green chilies, fresh lime and cilantro pretty much complete the ingredient list.

Well. Along with the chicken 🙂

What could be easier than that?!?!

This soup can be made while lounging around the house all day, cooking for a couple hours. Or it can be made super speedy if that’s not an option. We all know how that goes! 😉

Plus, leftovers stay great in the fridge for a couple days to make a pretty fantastic work week lunch option. Always a win!

I loved the slight spice that the diced tomatoes w/ green chilies added to the chicken soup mix and the fresh cilantro and lime really brightened up the flavor.

Crunchy tortilla strips just soak up all that delicious broth and make a wonderful serving topper along with a dash of spicy hot sauce too if ya like!

This spin on a classic definitely satisfied the Sunday soul, that’s for sure 😀
