After a weekend spent dining out and on-the-go, once Sunday rolled around I knew it was time to whip up something homemade, fresh & healthy for the upcoming week ahead!

However. As seems to be the norm these days. Time was not on my side…

House for sale = open house & showings on the regular = not much time for kitchen adventures?!

But somehow I still managed to fit in this quick lil’ dish. Which made for a perfectly light & quick go-to dinner for the week ahead. Just grab n’ go!

Oh yea, and it also cleaned out some goodies from the ol’ pantry. Like this half bag of leftover pasta… which seriously, come on, you know you do this too 😉

 

Canned black beans, corn, 365 roasted chipotle salsa and fresh cilantro.

 

I’m not sure that I’ll ever get enough of fresh cilantro. I love the stuff!

Such an easy frugal way to really amp up this simple flavor profile too.

Boil some pasta. Drain. Throw in the veggies.

 

Stir it all up.

 

And combine with the smoky roasted chipotle salsa. 

Which is one of my favorite jarred options (from Whole Foods).

Apparently I’m not the only one either?!

Now do you see why it’s been designated as “Mexitalian”…??

 

And lucky for me. It just worked!

Plus, it couldn’t be easier 😛

This keeps wonderfully for a few days in the fridge and makes for a deliciously light meal in a snap.  Perfect for a busy week!

Plus. Did I mention that it’s only 5 ingredients? Right.

Can’t beat that 😉
