Washington Weekend

Hey there friends! How was your weekend?!

And how is it Monday already?!

Margaritas for everyone? ;)

This past weekend I had a few adventures of my own visiting friends up in good ol’ Washington D.C…

 

Gorgeous weather. Good times. Old-school reunions.

Almost-baseball games (don’t ask… haha)

Cactus Cantina

Chile relleno, freshly made tortilla chips & salsa, white sangria and salad w/ house-made dressing (and hearts of palm, love!)

 

If you’ve never tried a chile relleno, all I’m sayin’ is please please do.  This was a tender poblano stuffed with gooey cheese, battered and lightly fried then smothered in a spicy tomato sauce & more cheese. I mean seriously y’all. Yum!

Maybe the best bellini I’ve ever had? But really.

Egg white omelet w/ spinach, mushrooms & cheese. Lobster roll w/ potato salad.

Not too shabby, huh?

My thoughts exactly :D

But now it’s back to reality. And back into the kitchen for this lady!

This week I’ve got a fantastic hot-weather recipe for you guys…

One that turned out so very good and one that I can’t wait to share.

It’s not only delicious, but also just perfect for the 90 degree temps we’re getting here this week!

Total fan.

Bringggg on the summer weather… and the summer eats! :)

I mean woah. Wowza.

    • Hahaha yea. We didn’t realize the reasonably priced tix would be sold out so went to Half Street Fairgrounds to get our baseball experience for the day instead ;)
