Spicy Coconut Noodle Bowl

Simple, clean, fresh flavors.

A characteristic of Asian food that I absolutely adore.

This dish features fresh vegetables and light, airy rice sticks… which you’ve seen here before.

Plus fresh basil, which just screams summer to me :D

This particular basil from the Asian market is so ridiculously fragrant too.

Maybe next time I’ll ask what type of basil it is exactly… inquiring minds need to know!

And can we just take a minute to talk about how fabulous the combination of coconut milk, soy sauce & sambal oelek is?

The perfectttt mixture of sweet/ salty / spicy!

Meatless Monday Wednesday.

What was that… garbanzo beans don’t usually make their way into Asian dishes? Pish posh… we’re doin’ it anyways!!

Garlic. Coconut oil.

Shredded carrot.

Frozen peas.

Garbanzo beans.

Rice sticks.

Spicy coconut sauce.

Finished with fresh basil.

And topped with crushed peanuts and more spicy sambal to serve.

Now THAT is what I’m talkin’ about! :P

A 1-2-3 throw together dinner.  Perfect for a busy Wednesday.

  5. YUM! I went to an Asian market last weekend to find Sambal, but they didn’t have any. I was sad.
