HAPPY 2012 YA’LL!!
2012 is going to be a great one, don’t you agree?
Lil’ Sis and I rang in the new year celebrating & having a total blast with some fabulous folks… hope all of you enjoyed much of the same as well!
Our NYE celebration began with drinks & appetizers at a good friend’s place …
… followed by party time at Rowland’s Fine Dining, which was rented out by a big group of our friends. Lots of dancing, celebrating and the such. Ya’ll know the drill!
For the pre-NYE festivities I threw together a quick recipe that I can’t wait to share with ya’ll too!
These super easy pepperoni pizza puffs were not only really delicious, but also super easy to make. And you know just how much I love that!

I’ll also vouch that they would be excellent late-night or even post-NYE next day eats too, just sayin’
Pepperoni and mozzarella cheese.
Flour, baking powder, egg, milk, basil & oregano.
All stirred together and poured into a greased muffin pan, evenly between 12 cups.
Baked for about 20 minutes.
Until golden brown.
Then served!
With pizza sauce for dipping if you’d like.
But they’re good even without it!
Super easy. And super delicious. Like, had to hide ‘em from Lil’ Sis and Myles after making ‘em so some actually made it to the party kinda delicious
‘Nuff said. Ring in the new year right and give the pizza puffs a whirl!

Pepperoni Pizza Puffs Brought to you by Rachael Ray, for the most part. 1. Chop pepperoni and shred cheese. 2. Whisk together flour and baking powder in a medium bowl. Whisk together milk and eggs in a seperate bowl. Combine the two, whisking with a fork until combined. 3. Add spices, pepperoni and cheese. Stir to combine. 4. Pour into a greased muffin pan. I used a 12-muffin pan and filled them about 1/3 to 1/2 of the way, evenly using up the batter. 5. Bake at 375F for 18-20 minutes, or until the pizza puffs begin to brown a bit and a toothpick stuck in the middle of one comes out clean. Serve warm, with pizza sauce for dipping!

We had a low key holiday this year – hubs is still recovering from surgery so its kinda hard to eat yummy food when all he wants to eat is bread – hopefully this week he’ll start to feel better!

Those puffs sound fantastic! Cornbread may be a fun substitute or even Mexican style puffs?!
One of my fave apps [that I have never brought but have eaten, haha] are stuffed mushrooms!

What a great idea! Homemade “pizza” without the fuss of rolling out the dough, etc. Awesome. I usually bring veggies and hummus or fruit and fruit dip!
