I don’t make this stuff up people…
Yet totally mesmerizing…?
The whole world seemed a bit golden for a bit with the shadows from this cloud formation… it was nuts!
But anyways, onto the food, story of my life 😉
This recipe was thrown together the other night on a whim…
It was an idea that resulted from the tons-o’-tomatoes still on hand and some artichokes that had been calling my name in the freezer (thank you Trader Joe’s 🙂 ).
The final result of this throw-together meal was beyond what I expected. The flavors were fantastic, and the meal was a hit.
Even though it may seem simple, somehow the combination turned out superb.
Kind of like 1 + 1 = 3, ya know (???) <– I am such a math nerd 😉
Tomato, Lemon & Artichoke Topped Angel Hair Pasta
- 1 onion, chopped
- 1 bag frozen artichokes
- 3-4 large tomatoes, chopped
- 2 cloves garlic, chopped
- dried basil (about a tablespoon)
- dried oregano (about a tablespoon)
- sea salt and black pepper
- 1 tblsp olive oil
- crumbled feta to serve
- fresh lemon juice to serve
Start by sauteing the chopped onion in olive oil over medium heat, until translucent (7-8 minutes).
Then add the frozen artichokes and a little bit of H2O. Cook over medium until they warm through, adding more water if they start to stick. Season with basil, oregano, salt and pepper too.
Lastly, add the tomatoes and garlic, stirring and cooking over medium for another 2-3 minutes.
Boil the angel hair pasta according to direction. And if you’re less hungry/forgetful than I was, you might just reserve some pasta cooking water to add to the sauce and make it “saucier” 😛
Pile the tomato & artichoke mixture atop a bed of angel hair. Then sprinkle with crumbled feta and top with a splash of fresh lemon juice.
Please don’t forget this step mmmmkay 😀
The feta (which I’m still workin’ through that 10lbs thank you very much haha) adds a lovely saltiness & creaminess to the pasta dish.
And the fresh squeeze of lemon really takes this dish’s flavor up to a whole ‘notha level!!
The lemon was Fanatic Mom’s idea to add too <— gotta give credit where credit is due 😉
This dish would also be lovely topped with shrimp, scallops or even grilled chicken.
We chose to keep it meatless, just ’cause.
Either way, the perfect summer meal! Simple, clean, light flavors going on 🙂
