Well I told ya’ll I’d put all those tomatoes to good use 😉

This salad is super simple and couldn’t taste any fresher and more like summer!

In fact, it’s even better after a few hours in the fridge.  All those flavors gettin’ friendly and what not.

You know how that goes 😉

Easy Summer Tomato Salad

Serves however many you want, just adjust ingredients accordingly!

Here are approximates of what I used, but seriously, you can’t mess this up so just use what you have/like 😀 

  • 1 cucumber, chopped
  • couple handfuls of cherry / small tomatoes, halved
  • 1/3 onion, diced
  • frozen corn, about 2 cups, defrosted
  • balsamic vinegar
  • olive oil
  • dried basil & dried oregano
  • sea salt, black pepper 

Just chop the veggies, sprinkle on the seasonings, stir up the dressing and combine everything with a good stir.

For the dressing I did about 1 part vinegar to 1 part oil – because that’s just the way I like it!

This salad was a quick put-together on Friday and now I have a yummy meal and snack option for this warm summer weekend 🙂

It would even be awesome topped with some crumbled feta or served over a bed of romaine lettuce… perhaps some fresh pasta mixed in too?  Versa-til-a-tyyyyyy!
