Tonight’s dinner was a case of “when two recipes collide”….

You see, a few days ago I spotted this delicious Two Bean Quinoa Salad on the fabulous Courtney’s blog, it looked so fresh and delicious and was just screaming my name. 

But I also couldn’t get this  Summer Corn Salad out of my mind, which I came across on one of my new favorite sites The Kitchn!

Without being able to decide on which one to make, I decided why not combine the two and see what happened?!

Recipe for success (?): 

1 great recipe + 1 great recipe = 1 super-fabulous-awesomely-delicious recipe!!

Am I right or am I right? 😛

Summer Vegetable, Mint & Quinoa Salad

Serves 6

  • 4 ears corn, cooked & removed from cob
  • 2 cups green beans, cut into 1″ pieces
  • 1 pint grape tomatoes, halved
  • 1/4 cup pine nuts
  • 1/4 cup fresh mint, chopped
  • 1 cup quinoa
  • 2 tblsp olive oil
  • 3 tblsp white balsamic vinegar
  • sea salt & black pepper to taste

Easy as 1-2-3-   4?  😀

Step 1:  Boil the corn in enough water to cover, 5 minutes.  Then rinse with cold water.

Remove from cob using a nice sharp knife.

Step 2:  Prep the other veggies.

Halve the tomatoes.  Chop the mint.  Cut the green beans into 1″ pieces.

Throw the green beans into the microwave with a few tablespoons of water, 4 minutes will do, just to cook them a bit but still retain their “crunch.”

Step 3:  Cook the quinoa.  Super easy. 

Rinse quinoa.  Add to a pot with some water, 1:1.75 ratio.  Bring to a boil, cover and turn down to a simmer for 15 minutes until done.

Step 4:  Combine!

Tomatoes, green beans, corn, fresh mint.

Pine nuts, sea salt & black pepper.

Warm quinoa, olive oil and white balsamic vinegar.

Stir, stir, stir.

Then serve, serve, serve.

A bowl full of summer, is it not?! 😉

I think so!

There is nothing I can say about this recipe except for it perfectly captured the essence of fresh, clean summer flavors. 

Juicy bursts of tomato, sweet bites of fresh corn, the crunch of fresh green beans with the coolness of fresh mint.  Mmmmmmmmm hmmmmmmmmm 😛

And quinoa is such a wonderful addition to any diet, I can’t believe I haven’t used this power food sooner?!

This was the perfect weeknight meal.  Served with a hard-boiled egg on the side and we were in business 🙂

Speaking of business, countdown to an extended weekend is t-minus-1 day…  I’m so ready for it!!!

Lil’ Sis and I are hangin’ around town since we’ve been go-go-go for the past few weeks.  But I’m sure some fun shannigans and adventures will ensue, if I know us well enough! 😉
