For the past few days I have had quite the hankering for what some would consider a cooler weather meal –> SPAGHETTI!

So in an effort to “summer-ify” this cool weather classic, I decided to incorporate the summer squash that really needed using, you know you’ve been there too 😛 I had in my crisper drawer.

Adding the fresh squash not only upped the nutrition factor, but also made it super affordable to stretch a smaller amount of higher quality meat.

This makes both me and my wallet happy.  Which in turn, makes life good, am I right? 😉

Summer S’ghetti

Serves 4-5

  • 4 small summer squash, diced
  • 1 onion, diced
  • 1 clove garlic, minced
  • 1/2 lb. grass-fed ground beef
  • 24oz. jar pasta sauce
  • 1 tblsp olive oil
  • dried oregano & basil to taste
  • sea salt & black pepper to taste
  • orechiette, cooked, to serve

Start by chopping up all the veggies.

I decided that I wanted smaller pieces of veg to really blend in with the ground beef – hence the “dice” versus a slice or chop!

90/10 grass-fed ground beef.  Half pound is all ya need.

And into the pan we go. 

Start with a tablespoon of olive oil and the onions, cooking for 2-3 minutes over medium. Then throw in the ground beef, stirring and cooking until it starts to brown.

Now add the garlic and summer squash, stirring and cooking another minute or two over medium heat.

Then in goes the pasta sauce. 

You could totally used a can (box!) of crushed tomatoes too, however I happened to get this Bertoli pasta sauce on the cheap thanks to a coupon so it was gettin’ used.

Ya’ll know how that is.

In she goes!

If the sauce is too thick, like it was for me, add in a bit of water.  I used a cup or so…

Also sprinkle in your seasonings at this point, a few dashes of oregano, basil, salt and pepper will do just fine 🙂

Cover and let simmer away for 30 minutes or so, stirring occasionally.

Yummmmm-O.  Flavors gettin’ happy 😀

To serve, orecchiette was where it was at!

Lil’ Sis was fascinated with this stuff lol, it was pretty amusing.

Ooo’ing and Aww’ing over orecchiette was not exactly where I saw the night going, but alas, some things you just can’t predict 😉

Cooked up according to direction.

Then piled high with that delicious summer squash pasta sauce!

If you’re allowed to ever use cheese because no one in your family detests it which is just absurd how does that happen kidding sis you have some Parmesan cheese on hand then feel free to sprinkle away too!


Kidding Lil’ Sis, I can deal w/out the cheese for a few months. I think 😉

We both really liked this! And it definitely satisfied that mid-summer spaghetti craving o’ mine for sure.


The summer squash added a nice dynamic to your average meat sauce and would probably be a great way to sneak in some veggies for those that don’t love them quite as much!

 The little orecchiette are great too, smooth lil’ rounds of pasta that just coat themselves with the delicious sauce, bite after bite.

Mmmm mmmm good!

  5. I love spaghetti and think this is a great way to get in a few extra veggies.

    My husband is not a fan of squash and zucchini – he told me today I was killing him with them. So dramatic.
