Before I get to a Father’s Day dinner recap, I have some exciting stuff to share with you guys…

So back to some more good stuff…
Did all of you have fun celebrating Father’s Day with your favorite father, father-figure and/or father-to-be??
I sure hope so because I know I sure did!
My Dad is seriously the coolest, most level-headed guy (in a house full of 3 women none-the-less!) and an absolutely wonderful dad to these two ladies…
Years of carting us around to softball & gymnastics practices, swim team events, braving the great outdoors camping for YMCA Indian Princesses, letting us play Pretty Princess and put barettes in his hair (Mom don’t tell him I put that on the internets haha!)…. we are seriously so lucky to have him as a father.
I know that I couldn’t have wished for a better Dad if I tried 🙂
So of course last night it was all about Dad.
A few gifts, a fabulous dinner made by Fanatic Mom and lil’ miss princess herself for a visit 😉
Lucy Dog is basically my Dad’s sidekick when he’s around…
…follows this man everywhereeeeee.
Hmmmm wonder why? 😛
Nom nom nom yummmmmy treat. Lol.
To start off the wonderful Father’s Day dinner that mom prepared we cracked open a bottle of rosé in typical Lane lady fashion!
I’m not normally a huge rosé fan but this particular one is truly stellar. The perfect summer pour!
Side salad to start: lettuce, tomatoes, cucumbers, onion, red peppers, olives… you know, the works!
Then came out the big guys: fresh North Carolina shrimp.
Coated in McCormick’s Recipe Inspirations Garlic Lime Fajitas seasoning blend which featured garlic, onion, cumin, black pepper, oregano and cilantro…
I’m usually skeptical on premade seasonings for some reason, but this McCormick’s blend was seriously rockin’?!
I gotta get my hands on some more of these delicious shrimpsssss again 😛
To go with our shrimp Mom cooked up a layered Greek green bean & potato casserole.
Probably not something you’ve seen or had before, and definitely a new one to me, but this was really good!
Fresh green beans, potatoes, grated tomatoes, onions, garlic, a whole lotta parsley and a few other things simmered for an hour until the flavors just become one big happy family.

Topped with a final crumble of feta cheese and we were in business. Feta makes it bettah! (I just hadddd to go there….)
This dinner was set-to-impress, Mom rocked it and everything was absolutely delicious!
Best quote of the night by the man of the hour: “How many pictures of those green beans are you going to take anyways?”
Hahaha ohhhh Daddddddd.
After almost 2 years of blogging you think he’d be used to this already 😉

And as if Fanatic Mom hadn’t outdone herself already with this amazing meal, check out the zucchini bread that we had for dessert!
Ehhh hmmmmm made with Chobani too might I add (love. it.) 😛

Sprinkled with cinnamon sugar and warmed in the microwave, this zucchini bread really made this meal a 115% WIN!
Go Mom! And Dad too, obviously… who even offered to do the dishes on Father’s Day. Because that’s just the kind of guy he is 😉
