Serious case of the Mondays yesterday = 20 minute dinner = yes please!
Because you know, sometimes life just gets in the way now doesn’t it 😉
Luckily I picked up these bleu cheese & bacon burgers from Whole Foods to stow away for such an occasion.
And they did not disappoint!
To go with we had some organic mac n’ cheese, because “having boxed macaroni & cheese as a side dish with your dinner is OK.” <— right Courtney?! 😀
If you haven’t checked out Courtney’s post on healthier versions of this boxed classics vs. ehh hmmm Kraft-like products then you definitely should.
And then throw away said Kraft-like products if you feel so inclined… just sayin’ 😉
I added some extra cheese too because, you know, there just wasn’t enough cheese going on in this meal.
Served with a side of brussels, this was a seriously easy dinner and also seriously delicious.
And yes, I put hot sauce on my mac n’ cheese… normal, right.
This easy dinner was also very welcomed because The Man and I spent some time discussing a lil’ project in Casa de Fanatic we’re ready to kick off!
