What a wonderful Saturday this has been!

I hope all of you can say the same as well 🙂

The day started with an intense ExerciseTV Kickboxing workout followed by getting my hair did then some shopping time with Fanatic Mom!

We visited The Fresh Market, where they were sampling their holiday recipes.  The baked brie topped w/ nutella & hazelnuts served with ginger snaps was outta this world.  Will be purchasing that one for the holidays, you can count on that.

We also visited World Market (my downfalllll), our favorite wine store plus a new one that I’ll definitely be checking out again (they offer wine classes!)

After being busy busy all day, I was ready for a fast n’ easy meal at home for sure.

So I poured a lil’ bit of one of my purchases from today…

…and got to work in the kitchen on an easy beef stir-fry.

Ahhh Virginia wines.  I do love thee 🙂

Really enjoyed this one too!  I need to make a visit to Barren Ridge soon me thinks.

Beef Teriyaki Stir-Fry

Tom Leonards decided to make this really easy on me tonight…

The Man and I spotted this lil’ treasure last night while picking up our dinner groceries and knew it would be on the menu tonight.

How could you resist all these fresh veggies for a mere one dollar and 99 cents?  I mean seriously.

Love me some Tom Leonards.

I got to work on the stir fry using this new-to-me sauce:

Which I must say makes a darn good stir fry.

In go the veggies with some veg oil.  Stir fry until tender and browned a bit.  I threw in a clove of garlic towards the end for good measure, since that’s just what I do. 😉

Once done, remove from the wok.

Now it’s time to cook the meat.  Local grass-fed top round to be specific.  Which I let marinate in the above terryaki sauce for about 2 hours before cooking.

Sear it up.  Then add in the cooked veggies and stir to combine.

Served atop a bed of brown basmati rice.

A simple, flavorful and fast dinner.

I’ll take it!

The Kikkoman Teriyaki sauce was actually pretty darn good.

I really despise the store bought “stir-fry” sauces, they seem so thick & syrup-y to me.  But this was definitely not like that at all.  It was perfect 🙂

Now if you’ll excuse me, I have some quality time with The Man and the pup to attend to…

Happy Saturday!
