So after finishing up my afternoon at the workplace (meeting = success!) it was time to head home for some Yoga Sculpt – I was so excited!!  Yoga really relaxes me and my body feels so worked after….sigh 🙂  Speaking of relaxing, I have this small water fountain

and I love to put it on when I do yoga.  It sounds like a slow trickly of water and really gets me in the “yoga mood.”  Maybe that’s weird, who knows….?  However I like it, so that’s that!

So anyways, The Man had man football practice stuff to do after work…. so I got some time to chill out and get started on some dinner before he got home.  On the menu tonight:

  • Stuffed peppers
  • Italian salad

First I started with the peppers, cutting the tops off & removing the seeds and submerging them in some boiling water for about 8 minutes, covered.  This softens up the peppers before baking!

For the “stuffing”
  • 1 clove garlic, minced (use 1 tblsp jarred if that’s how you roll!)
  • 1/2 chopped onion
  • 1/2 tblsp chopped ginger
  • 1/2 package ground turkey (or chicken)
  • 3 oz. tomato paste (1/2 small can)
  • 1/8 cup soy sauce
  • 1/4 cup water
  • Parm cheese

Saute garlic, onion and ginger in 1 tblsp olive oil.  TRICK: keep your fresh ginger in the freezer, I rarely use mine and it stays good forever up in there! 

Add ground turkey and let it cook through over medium heat.

Then add the water, tomato paste & soy sauce to the mix (I also add a splash of red wine 😉 ) and let flavors combine over med-low heat for about 10 minutes – if it’s kinda thick add a bit more water.

Now ye ol’ peppers are ready for stuffing!  Spoon the turkey mixture into each pepper, top with Parm cheese (however much you want!).  I also put a lil’ Parm in the bottom of the pepper before filling too 😉 Place in a 350F oven for about 10 minutes until cheese melts a bit — you can also put some mozzarella on top or whatever cheese ya like!

The salad mix tonight included

  • Romaine
  • Tomato
  • Onion
  • Roasted red peppers
  • Black pepper
  • Oregano (try this!)
  • Ken’s Olive Oil & Vinegar

So really bloggies, these peppers rock my world, the addition of the soy sauce gives them a delicious tang and the ginger compliments the flavors so nicely!  In fact, I don’t think I would ever try another recipe bc I like this one THAT MUCH!  Dinner was superfab and I was quite pleased, and The Man was happy and full after his football playin’ shannigans.  So all was good 🙂

Veggie quota for today – check!  Yea for renewal of the freshness inspired by homegirl Jenna!! 🙂

For dessert we whipped up a lil’ concoction with the tin roof sundae ice cream and a lil’ bit of this guy

I will say though, this stuff will never replace or come close to my beloved dark choc pb, don’t worry 😉

    • I think I got mine at like Big Lots or somewhere random like that a few years back? I actually found it when we moved into the new house, it had been stuffed away in a box at my apartment for like 2 years! You can prob find one at Target or someplace like that I would think?
